Job SummaryGlassmates Lounge is looking for an experienced Bar Kitchen Supervisor who can take complete responsibility for kitchen supervision, hygiene, food costing, inventory, store management, and Swiggy/Zomato order operations.

We are looking for a practical, hands-on person who can control kitchen wastage, maintain quality standards, and ensure smooth day-to-day kitchen operations.

• Key ResponsibilitiesSupervise complete day-to-day kitchen operations.
• Maintain excellent kitchen cleanliness and hygiene at all times.
• Ensure all staff strictly follow food safety, hygiene and sanitation standards.
• Monitor kitchen staff discipline, work allocation and performance.
• Take complete responsibility for kitchen inventory and stock management.
• Maintain the kitchen store properly with accurate stock records.
• Check daily inward/outward stock and maintain proper records.
• Monitor raw-material consumption and prevent wastage, leakage and excess usage.
• Coordinate purchasing requirements and ensure sufficient stock without over-ordering.
• Monitor food quality, portion sizes and consistency.
• Handle the Swiggy & Zomato order phone/tablet efficiently and ensure no online orders are missed or unnecessarily delayed.
• Coordinate online orders with the kitchen and ensure correct packing and timely dispatch.
• Maintain proper food packaging standards for delivery orders.
• Provide daily kitchen, stock and wastage reports to Management.

⭐ MOST IMPORTANT RESPONSIBILITY – FOOD COSTING & COST CONTROLCandidate MUST have strong experience in FOOD COSTING.

The Kitchen Supervisor will be responsible for:

• Preparing and calculating food costing for every menu item.
• Working out the exact ingredient-wise cost per dish/portion.
• Maintaining standard recipe quantities and portion sizes.
• Calculating actual food cost percentage and reporting it to Management.
• Identifying high-cost and low-margin menu items.
• Controlling raw-material consumption and kitchen wastage.
• Comparing purchase price, consumption, sales and closing stock.
• Suggesting portion/pricing changes wherever required to improve profitability.
• Ensuring that kitchen operations remain cost-controlled and profitable.

Candidates without practical experience in food costing and kitchen inventory control will NOT be preferred.

• Required QualificationsPrevious experience as a Kitchen Supervisor / Kitchen In-Charge / Restaurant Kitchen Controller / F&B Supervisor.
• Experienced candidates only.
• Strong practical knowledge of food costing and cost control is compulsory.
• Good knowledge of kitchen inventory and store management.
• Experience handling Swiggy/Zomato orders.
• Knowledge of food safety and hygiene standards.
• Ability to manage kitchen staff and coordinate during busy hours.
• Basic reporting and stock-record maintenance skills.
• Experience with GoFrugal Inventory/POS software is an added advantage.

Preference: Candidates with previous experience in high-volume bars, restaurants, lounges or similar F&B establishments.

Salary: ₹18,000–₹20,000 per month + performance incentives
