Shift Incharge – Idli ProductionThe Shift Incharge is responsible for overseeing the entire idli-making and production operations during the assigned shift. The role involves managing the production team, ensuring smooth and efficient idli production, maintaining product quality and hygiene, achieving daily production targets, and ensuring proper discipline and adherence to company SOPs.

• Shift Timings & RotationThe Shift Incharge will follow a two-week day shift and two-week night shift rotational schedule.
• Day Shift: 10:00 AM to 8:00 PM
• Night Shift: 10:00 PM to 8:00 AM
• After completing the respective two-week shift rotation, the employee will have one week off before commencing the next shift rotation.
• Shift schedules may be adjusted by management based on production requirements and operational needs.
• Key ResponsibilitiesSupervise and coordinate employees involved in idli preparation, batter handling, steaming, demoulding, packing, and related production activities.
• Ensure daily idli production targets are achieved according to the production schedule.
• Monitor the entire idli-making process to ensure consistent size, weight, texture, softness, appearance, and overall product quality.
• Ensure proper handling and usage of idli batter, rice, urad dal, ingredients, and other raw materials.
• Monitor fermentation, batter consistency, steaming processes, and other critical production parameters as per company SOPs.
• Ensure proper hygiene and food-safety practices are followed throughout the production process.
• Manage employee attendance, shift allocation, punctuality, productivity, and workplace discipline.
• Track raw material consumption and report shortages, excess usage, or wastage to management.
• Ensure idli-making machinery, steam systems, grinders, boilers, and other production equipment are operated safely and efficiently.
• Monitor equipment performance and immediately report breakdowns, abnormalities, or maintenance requirements.
• Maintain accurate production records, including quantity produced, wastage, raw material usage, production issues, and manpower deployment.
• Prepare and submit daily shift production reports to management.
• Coordinate with management regarding production requirements, operational issues, maintenance, manpower, and other shift-related matters.
• Ensure the production area, equipment, utensils, and workstations are maintained in a clean and hygienic condition.
• Ensure all employees follow the company's SOPs, hygiene standards, food-safety procedures, and workplace safety requirements.
• Handle operational emergencies and resolve production-related problems promptly during the shift.
• Ensure proper handover to the incoming Shift Incharge, including production status, pending work, equipment issues, manpower issues, wastage, and other important information.
• Take responsibility for maintaining smooth, uninterrupted, and efficient idli production throughout the assigned shift.
