JOB DESCRIPTION – STORE IN-CHARGE

Job Summary

The Store In-Charge is responsible for managing the day-to-day store operations of the restaurant, including receiving, checking, storing, issuing, and maintaining stock of food ingredients, non-food items, packaging materials, and other restaurant supplies. The role requires proper stock control, accurate records, and coordination with the kitchen, purchase, and management teams.

Key Responsibilities

• Receive and verify all incoming food and non-food materials against purchase orders/invoices.
• Check the quantity, quality, freshness, weight, expiry date, and condition of received items.
• Maintain proper stock levels for meat, chicken, seafood, vegetables, groceries, beverages, spices, oil, packaging materials, cleaning materials, and other supplies.
• Ensure proper storage of non-vegetarian food items according to hygiene and food-safety requirements.
• Maintain proper FIFO/FEFO practices to minimize wastage and expiry.
• Issue materials to the kitchen and other departments based on approved requirements.
• Maintain daily records of stock received, stock issued, wastage, and closing stock.
• Conduct regular physical stock verification and reconcile it with system/register records.
• Identify shortages, excess stock, damaged items, expired products, and unusual consumption and report them to management.
• Monitor minimum and maximum stock levels and inform the purchase team when replenishment is required.
• Maintain proper segregation and storage of raw materials, frozen items, dry goods, and cleaning chemicals.
• Ensure refrigerators, freezers, racks, and storage areas are clean, organized, and properly maintained.
• Monitor temperature and storage conditions of perishable and frozen products.
• Coordinate with the chef/kitchen team regarding daily and upcoming material requirements.
• Ensure no unauthorized person removes or accesses store materials.
• Maintain proper documentation of stock transfers between branches/departments, wherever applicable.
• Minimize food wastage, spoilage, pilferage, and unnecessary purchases.
• Assist management during monthly stock audits and physical inventory checks.
• Maintain cleanliness, hygiene, and safety standards inside the store.
• Follow restaurant policies, food-safety procedures, and company rules.

Required Skills

• Good knowledge of restaurant inventory and store management.
• Basic knowledge of non-vegetarian food products and their storage requirements.
• Good understanding of FIFO and FEFO methods.
• Basic knowledge of stock registers, inventory software, MS Excel, or POS/inventory systems.
• Good communication and coordination skills.
• Ability to maintain accurate records and handle stock reconciliation.
• Good observation skills to identify quality and quantity discrepancies.
• Ability to work under pressure in a fast-paced restaurant environment.

Qualifications & Experience

• Qualification: 12th pass / Diploma / Degree preferred.
• Experience: 1-5 years of experience in restaurant, hotel, catering, or food-industry stores preferred.
• Experience handling meat, chicken, seafood, frozen and dry food products will be an advantage.
