Commis Chef

About Us:

Paduka Hospitality runs Idlinama, TN Express, and Savoia across Delhi NCR, serving authentic Tamil Nadu and Chettinad cuisine alongside a growing patisserie brand. We're hiring kitchen staff across the Commis tiers to support daily prep and cooking operations under our Executive Chef's kitchen.

Role Overview:

Commis roles are tiered by experience and responsibility - Commis 3 is entry-level, Commis 2 is intermediate, Commis 1 is senior, closest to a station lead. Applicants can indicate their level or we'll assess and place based on the interview/trial.

Key Responsibilities (scale with tier):

• Commis 3 (Entry): Basic prep - washing, cutting, portioning ingredients; maintaining cleanliness of assigned station; following recipes and instructions from seniors exactly
• Commis 2 (Intermediate): Independent prep of standard dishes; supervising Commis 3 on basic tasks; maintaining consistency per standardized recipes (e.g., locked recipe versions); stock rotation (FIFO)
• Commis 1 (Senior): Running a section/station independently during service; training juniors; ensuring recipe and portion consistency; flagging quality or supply issues to the Executive Chef; supporting menu execution for new items

Common Requirements (all tiers):

• Prior kitchen experience preferred (Commis 3: freshers with culinary training acceptable; Commis 1: minimum 2–3 years relevant experience)
• Understanding of South Indian/Tamil Nadu cuisine preparation a plus, not mandatory - training provided
• Willingness to work rotational shifts, including weekends and early mornings
• Strong hygiene and food safety discipline
• Ability to follow standardized recipes precisely and consistently
• Physically fit for extended standing and kitchen-floor work
