Job Description

Marinate kebab/tikka items per Base Recipe Card specs (proportions, resting time, spice mix)

Operate Rational oven for tikka/kebab finishing to programmed presets

Portion and skewer to weight/count standards on signature items

Follow Order Execution Card sequence: Equipment → Ingredients → Assembly → Portioning → Plating → Garnish → Add-ons

Receive and correctly store prepped base gravies dispatched from Base Kitchen

Temper and finish gravies per Base Recipe Card (butter/cream ratios, final seasoning adjustment, consistency check)

Portion to standard per dish

Run receiving checks against Base Kitchen dispatch — flag quality/consistency issues immediately to KC
