Operations Head

Role Overview:-

The Operations Head will own end-to-end operations across all outlets and brands – kitchen execution, staffing, vendor and procurement management, platform (Swiggy/Zomato) performance, and P&L delivery. This is a hands-on leadership role for someone who can run a multi-outlet, multi-brand food business as a tight, data-driven operation.

Qualification:-

• Bachelor's degree in Hotel Management (BHM) or hospitality/F&B management; MBA in Operations is a plus but not mandatory
• FSSAI food safety certification, or willingness to obtain it within the first 90 days
• Working knowledge of cook-chill / MAP (modified atmosphere packaging) processes is a strong advantage

Experience Required:-

5–8+ years in multi-unit F&B, QSR, or cloud kitchen operations

• Prior experience managing multiple outlets or a dark kitchen / cloud kitchen network (single fine-dine or single-brand background not preferred)
• Direct, hands-on experience with Swiggy and Zomato partner operations – order management, ratings, ads/discount spend, and payout reconciliation
• Experience working within a POS/ERP system (Petpooja experience preferred)
• Demonstrated P&L ownership – food cost %, labor cost %, and outlet-level profitability
• Vendor and procurement management experience (equipment, cold-chain, AMC contracts)
• Staff scheduling and multi-shift manpower planning across locations.

Key Responsibilities:-

• Own daily operations across all brands and outlets, ensuring SOP and food-safety compliance
• Manage aggregator performance – ratings, order accuracy, ad spend ROI, and payout audits
• Drive cost control on food, packaging, and labor across the base kitchen and outlet network
• Manage vendor relationships and procurement for kitchen equipment and consumables
• Lead hiring, training, and performance management of outlet and kitchen staff
• Partner on rollout of operations tooling and dashboards (workflow, scheduling, task management systems)
• Report weekly/monthly on outlet-level P&L, discount burn, and operational KPIs.
